We strive to achieve as pure and nutritious a product as possible- minimizing the time taken to go from whole grain to assembled dough, and optimizing the natural fermentation period.
Factor in organic ingredients, and you discover a high standard of baked good which we refuse to sacrifice in order to produce something “cheaper”.
Unless expressly stated, our products are 100% naturally leavened (think sourdough) and free of any commercial yeast or chemical leavening agent.
